Peanut Butter Cookies



I thought I'd try this recipe that uses vanilla pudding (sugar free) because it sounded different. The end result is really just your typical peanut butter cookie...which is kind of a disappointment.

I found the recipe at KraftCanada.com and used Splenda Brown Sugar in place of regular. I also used Milk Choco Chips rather than chunks. David loves peanut butter, so he should enjoy them.

Shortbread Chocolate Chip Cookies



I was getting requests for shortbread cookies for the past couple of weeks, so yesterday I finally took an entire afternoon and made a triple batch.

Again, the recipe was found at AllRecipes.com. It's good, but I find them a little bit dry. I substituted the granulated sugar for Splenda. One third of the batch got Mint Choco Chips, another got Milk Choco Chips, and one I left plain. David told me they were my best batch of shortbread cookies yet, but I'm not sure. I left out the nuts because shortbread with nuts seems a little weird to me.

Maybe they need a bit of vanilla?

Pumpkin Roll with Cream Cheese Filling



It's close to Christmas time, so I thought I'd try out something festive. It turned out just okay (in my opinion), although David seemed to like it a lot. I guess I am not big on spice cake.

I found the recipe at AllRecipes.com and it had really good reviews. I altered a few things - substituting Splenda for the granulated sugar in the cake as well as the powdered sugar for the filling. I also used light cream cheese.

NOTE: I didn't roll it in a towel, as the recipe says. I rolled it between two sheets of wax paper and placed in the fridge for 30 minutes to cool before adding the filling.
